Papet Vaudois

A leek and potato mash from Vaud, traditionally served with a large cabbage sausage (Saucisson Vaudois).

Ingredients

• Saucisson Vaudois
• Leeks
• Potatoes
• White wine
• Cream

Instructions

1. Sauté leeks and potatoes
2. Add wine and poach the sausage on top
3. Mash vegetables slightly and stir in cream
4. Serve with the sliced sausage
