  1. 1. Roll puff pastry into a log and cut into 1-inch pieces. Press into tart molds. 2. Make a sugar syrup with water, sugar, and aromatics. 3. Whisk flour into cold milk, then cook until thickened. 4. Slowly whisk in the hot sugar syrup. 5. Temper the egg yolks into the mixture. 6. Fill pastry shells. 7. Bake at very high heat (500°F/260°C) for 10-15 mins until the tops are caramelized and "burnt" in spots. 8. Dust with cinnamon and powdered sugar.
