Payasa (Milk-Rice Pudding)

Ingredients
- rice, milk (cow or buffalo), sugar or jaggery, ghee, cardamom, saffron (optional)
Instructions
- Cook rice in milk until very soft and the milk has thickened. Add sugar or jaggery and a spoonful of ghee. Simmer until the pudding reaches a creamy consistency. Flavor with ground cardamom and saffron. Serve warm or cooled as a ritual offering or dessert.
