Lomo Saltado
A masterpiece of "Chifa" (Chinese-Peruvian) fusion, this stir-fry combines tender beef, onions, and tomatoes with a savory soy-vinegar sauce, served with both rice and fries.

Ingredients
- 500g beef sirloin, cut into strips
- 1 large red onion, sliced
- 2 tomatoes, sliced into wedges
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
- 1 tsp cumin
- 2 cups French fries (fried or baked)
- 2 cups cooked white rice
- Fresh cilantro for garnish
Instructions
- In a very hot wok or large skillet, sear the beef strips in small batches until browned. Remove and set aside.
- In the same pan, sauté the onion for 2 minutes until slightly softened but still crisp.
- Add the tomatoes, soy sauce, vinegar, and cumin. Return the beef to the pan.
- Toss everything together for 1 minute so the flavors meld.
- Fold in the hot French fries just before serving.
- Serve immediately with a side of white rice and garnish with cilantro.
