Ocopa Arequipeña
Similar to Papa a la Huancaína but with a distinct Arequipeño flavor, featuring a sauce made from huacatay (black mint), peanuts, and crackers.

Ingredients
- 4 boiled yellow potatoes, sliced
- 1/2 cup fresh huacatay leaves
- 1/2 cup roasted peanuts
- 150g queso fresco
- 2 aji mirasol (dried yellow chilies), seeded and sautéed
- 4 animal crackers or vanilla wafers (for sweetness)
- Evaporated milk
- Hard-boiled eggs and olives
Instructions
- Blend huacatay, peanuts, cheese, sautéed chilies, and crackers.
- Add evaporated milk slowly until a thick, creamy sauce forms.
- Arrange potato slices on a plate.
- Pour the Ocopa sauce over the potatoes.
- Garnish with egg and olive.
