Pescado en Amarillo
Fish fillets simmered in a yellow sauce of tomates, achiote, and herbs — a coastal Guatemalan dish from the Pacific and Caribbean shores.

Ingredients
- 600g firm white fish fillets (snook, bass, or tilapia)
- 4 tomatoes, diced
- 1 onion, sliced
- 3 cloves garlic
- 1 tsp achiote paste
- 2 tbsp oil
- Fresh cilantro
- Salt and pepper
- Rice to serve
Instructions
- Fry onion and garlic in oil until soft.
- Add achiote paste and stir to combine.
- Add tomatoes. Cook 10 minutes until saucy.
- Season fish. Lay in sauce.
- Cover and simmer 10-12 minutes until fish flakes.
- Add cilantro. Serve over rice.
