Philly Cheesesteak
The pride of Philadelphia: thinly sliced ribeye steak and melted cheese (Provolone or Whiz) on a crusty Italian long roll.

Ingredients
- 1 lb ribeye steak, very thinly sliced
- 2 long Italian rolls
- 1 onion, thinly sliced
- 4 slices Provolone cheese or Cheez Whiz
- Salt and pepper
- Vegetable oil
Instructions
- Sauté onions in a little oil until soft and browned; move to the side of the griddle.
- Sear the thinly sliced steak over high heat, chopping it with a spatula as it cooks.
- Mix the onions into the meat and shape into two mounds.
- Top with cheese and let it melt.
- Place split rolls over the mounds, then scoop the whole thing up into the bread.
