Phở Bò (Beef Noodle Soup)
The quintessential Vietnamese comfort food; a fragrant beef bone broth served with rice noodles, tender beef slices, and fresh herbs.

Ingredients
- For the broth: 2kg beef marrow and knuckle bones 500g beef brisket 1 large onion, charred 5 inches ginger, charred 5 star anise 1 cinnamon stick 3 black cardamom pods 1 tbsp fennel seeds 1 tbsp coriander seeds 1/4 cup fish sauce 1 tbsp rock sugar For serving: 500g flat rice noodles (banh pho) 300g eye round steak, thinly sliced Fresh herbs (Thai basil, cilantro, culantro) Bean sprouts, lime wedges, sliced chillies Hoisin sauce and Sriracha
Instructions
- 1. Blanch the bones in boiling water for 10 minutes, then rinse thoroughly. 2. In a clean pot, add bones, brisket, charred onion, ginger, and 5L of water. Bring to a boil, then simmer on low heat. 3. Toast the dry spices (star anise, cinnamon, cardamom, fennel, coriander) until fragrant and add to the broth in a spice bag. 4. Simmer the broth for at least 6-8 hours, skimming the surface regularly for clarity. 5. Remove the brisket after 2 hours and submerge in cold water to prevent browning. Slice thin when cool. 6. Season the broth with fish sauce and rock sugar. 7. Prepare the noodles according to package instructions. 8. Assemble: Place noodles in a bowl, top with brisket slices and raw eye round steak slices. 9. Pour the boiling hot broth over the meat to cook the raw steak instantly. 10. Serve with fresh herbs, sprouts, lime, and sauces on the side.
