Pie and Mash
A traditional London East End dish of minced beef pie served with mashed potatoes and a unique parsley sauce known as "liquor".

Ingredients
- Minced beef pies
- Mashed potatoes
- Liquor: 50g butter, 50g flour, 500ml eel stock (or fish/chicken), bunch of fresh parsley, salt, pepper
Instructions
- Bake the pies until golden.
- Prepare creamy mashed potatoes.
- Make the liquor: melt butter, stir in flour, and slowly add stock.
- Whisk in a huge amount of finely chopped parsley until the sauce is bright green.
- Serve the pie and mash smothered in the green liquor, often with a side of jellied eels.
