Pierogi Ruskie
The most beloved Polish dumplings, filled with a savory mixture of mashed potatoes, curd cheese, and fried onions. Served with sour cream and crispy bacon.

Ingredients
- 500g all-purpose flour
- 1 egg
- 200ml warm water
- 500g potatoes, peeled and boiled
- 250g twaróg (Polish curd cheese) or farmers cheese
- 2 large onions, finely diced and caramelized
- Salt and black pepper
- Topping: sour cream and fried bacon bits
Instructions
- Make the filling: Mash the boiled potatoes with the cheese and half of the caramelized onions. Season generously with salt and pepper.
- Make the dough: Mix flour, egg, and warm water. Knead until smooth and elastic. Let it rest for 30 minutes under a bowl.
- Roll out the dough thinly. Cut out circles using a glass.
- Place a spoonful of filling in the center of each circle. Fold in half and pinch the edges to seal.
- Boil in salted water in batches. They are ready 2 minutes after they float to the surface.
- Serve topped with the remaining caramelized onions and bacon bits.
