Pinakbet
An indigenous vegetable dish from the northern Philippines, flavored with fermented shrimp paste (bagoong).

Ingredients
- Vegetables: Bitter melon (ampalaya), eggplant, okra, string beans, squash (kalabasa) 100g pork belly, diced 2 tbsp shrimp paste (bagoong) 1 onion, chopped 2 tomatoes, sliced
Instructions
- 1. Sauté pork belly until the fat renders. Add onion and tomatoes. 2. Stir in the shrimp paste and cook for 2 minutes. 3. Add the squash and a little water. Simmer until the squash is half-cooked. 4. Add the rest of the vegetables. Cover and cook over medium heat, tossing gently until tender. 5. Serve as a healthy side or main with rice.
