Pīrāgi (Bacon-Onion Pastries)
Small, crescent-shaped yeast pastries filled with a savory mixture of smoked bacon and onions.

Ingredients
- For the dough: 500g all-purpose flour 250ml milk, warm 50g butter, melted 1 tbsp sugar 1 tsp salt 7g dry yeast For the filling: 250g smoked bacon, finely diced 1 onion, finely chopped Black pepper to taste 1 egg (for egg wash)
Instructions
- 1. Prepare the dough: Mix yeast and sugar with warm milk. Let it sit for 10 minutes. 2. Mix flour, salt, melted butter, and the yeast mixture. Knead until smooth. Let rise for 1 hour. 3. Prepare the filling: Sauté the bacon and onion until soft and slightly browned. Season with pepper. 4. Punch down the dough and roll it out. Cut out circles or squares. 5. Place a teaspoon of filling in the center of each piece of dough. 6. Fold the dough over the filling and pinch the edges to seal into a crescent shape. 7. Place on a baking sheet, brush with egg wash, and bake at 200°C (400°F) for 12-15 minutes until golden brown.
