Pivovarský Guláš (Brewer's Beer Goulash)

A dark, rich beef goulash made with traditional Czech dark beer, giving it a unique depth and slight bitterness.

Instructions

  1. Sauté onions in lard until dark brown (but not burnt).
  2. Add beef cubes and brown well on all sides.
  3. Stir in paprika and caraway, then quickly pour in the beer.
  4. Add beef stock to cover the meat. Simmer on low for 2-2.5 hours.
  5. When meat is tender, thicken the sauce with grated bread crusts.
  6. Add marjoram at the very end.
  7. Serve with bread dumplings or fresh rye bread.
