Pivovarský Guláš (Brewer's Beer Goulash)
A dark, rich beef goulash made with traditional Czech dark beer, giving it a unique depth and slight bitterness.

Ingredients
- 800g beef (chuck or shank)
- 500ml Czech dark beer (Pilsner or Budweiser dark)
- 3 large onions, chopped
- Lard or oil
- Sweet paprika, caraway seeds, marjoram
- Beef stock, salt, pepper
- Grated bread or flour for thickening
Instructions
- Sauté onions in lard until dark brown (but not burnt).
- Add beef cubes and brown well on all sides.
- Stir in paprika and caraway, then quickly pour in the beer.
- Add beef stock to cover the meat. Simmer on low for 2-2.5 hours.
- When meat is tender, thicken the sauce with grated bread crusts.
- Add marjoram at the very end.
- Serve with bread dumplings or fresh rye bread.
