Pork Tocino

Sweet, cured pork belly or shoulder, traditionally dyed bright red and served for breakfast.

  1. 1. Rub the pork with all the dry ingredients and pineapple juice. Marinate for 2 days in the fridge. 2. Boil in a pan with a little water until the meat is tender and water is gone. 3. Add oil and fry until the sugar caramelizes into a sticky red glaze. 4. Serve with garlic rice and eggs.
