Pörkölt (Beef Stew)

A thick, dark, and intensely flavored paprika stew, the foundation of Hungarian "stew culture."

Instructions

  1. 1. Sauté onions in lard until translucent. 2. Add meat and sear until browned. 3. Remove from heat and stir in paprika. 4. Add very little water (or wine)—the meat should "sweat" in its own juices. 5. Simmer on low heat for 2-3 hours until the meat is meltingly tender and the sauce is thick and glossy. 6. Serve with nokedli or boiled potatoes.
