  1. Peel and cut potatoes into 1/2 inch thick fries. Soak in cold water for 30 minutes, then drain and pat dry. Heat oil to 325°F (165°C) and fry potatoes until soft but not browned (about 5 mins). Drain. Increase heat to 375°F (190°C) and fry again until golden and crispy. While frying, heat the gravy until bubbling. Place hot fries in a bowl, top generously with cheese curds, and pour hot gravy over the top to slightly melt the curds. Serve immediately.
