Canada's most iconic comfort food — crispy fries topped with fresh cheese curds and smothered in hot, rich beef and chicken gravy. The curds must squeak when you bite them.

  1. Double-fry potatoes: first at 140°C until soft, then at 190°C until golden and crispy.
  2. Make gravy: melt butter, whisk in flour to make a roux, gradually add broth. Simmer until thickened. Season with pepper.
  3. Place hot fries on plates. Scatter cheese curds generously over them.
  4. Pour piping hot gravy over the curds — the heat should slightly melt them while keeping their squeaky texture.
