Psomi (Greek Village Bread)
A rustic, crusty sourdough-style loaf — the daily bread of Greek villages, traditionally baked in communal wood-fired ovens.

Ingredients
- 700g bread flour
- 300g whole wheat flour
- 20g salt
- 7g yeast (or 150g sourdough starter)
- 650ml warm water
- 2 tbsp olive oil
Instructions
- Mix flours, salt, and yeast. Add water and olive oil, knead 10 minutes.
- Bulk ferment 2 hours with one fold.
- Shape into a round boule. Proof 1 hour in a floured basket.
- Score the top. Bake at 230°C with steam for 45–50 minutes.
