Pupusas Revueltas
The iconic national dish of El Salvador: thick corn tortillas stuffed with a savory mix of beans, cheese, and chicharrón.

Ingredients
- 2 cups masa harina (corn flour) 1.5 cups warm water 1/2 tsp salt 1 cup refried red beans 1 cup shredded mozzarella or quesillo 1 cup finely ground chicharrón (pork paste) Curtido and salsa roja for serving
Instructions
- Mix the masa harina, water, and salt until a smooth, non-sticky dough forms. Take a golf-ball sized portion of dough and flatten it. Place a spoonful of the mixed filling (beans, cheese, chicharrón) in the center. Fold the edges over to seal the filling completely. Gently pat the ball back into a thick disc shape. Cook on a hot griddle or pan for 3-4 minutes per side until golden spots appear. Serve hot with curtido and salsa roja.
