Acadian Rappie Pie

A traditional Acadian dish made of grated potatoes with the moisture squeezed out, then reconstituted with hot chicken broth and baked.

  1. Boil chicken and onions in a large pot until tender. Remove chicken, debone, and shred. Reserve 8-10 cups of the hot broth. Peel and grate potatoes. Squeeze out as much liquid as possible from the grated potatoes using a cloth bag. Measure the discarded liquid. Replace that volume with the hot chicken broth, pouring it slowly over the potato pulp while stirring constantly. Stir in chicken pieces. Pour into a large greased baking pan. Bake at 400°F for 2 hours until a dark golden crust forms.
