Handmade pasta pockets filled with local sheep cheese and served with a simple tomato sauce.

Ingredients

• pasta dough, filling (fresh ġbejna sheep cheese, eggs, parsley), tomato sauce (garlic, tomato, basil)

Instructions

1. Make fresh pasta
2. Fill with cheese mixture
3. Seal into squares
4. Boil briefly
5. Serve with a rich, garlicky tomato sauce
