Rellenitos de Plátano
Sweet plantain "doughnuts" filled with a rich black bean and chocolate paste, fried and dusted with sugar.

Ingredients
- 4 very ripe plantains, peeled and cut into chunks
- 1 cup refried black beans (sweetened with sugar)
- 1 disk of Guatemalan chocolate, grated
- 1/2 tsp cinnamon
- Oil for frying
- Sugar for dusting
Instructions
- Boil the plantains in their skins until soft. Peel and mash them into a thick paste. Let cool.
- Mix the refried beans with grated chocolate and cinnamon in a pan over low heat until chocolate is melted. Let cool.
- Take a portion of the plantain paste, flatten it in your palm, and place a spoonful of the bean mixture in the center.
- Fold the plantain paste over the beans to form an oval-shaped rellenito.
- Fry in hot oil until golden brown on all sides.
- Dust with sugar while still hot and serve warm.
