Relleno Negro (Black Stuffing)

A dramatic and spicy black soup made with charred chilies and a stuffed chicken.

Ingredients

• chicken, ground pork (for stuffing), black recado (charred chilies), hard-boiled eggs, onions, tomatoes, epazote

Instructions

1. Dissolve black recado in water to make the broth
2. Stuff chicken with spiced pork and eggs
3. Simmer the stuffed chicken in the black broth until tender
