Rellenos de Güisquil

Slices of chayote squash stuffed with cheese, battered in egg, and simmered in tomato sauce.

  1. Peel and slice the chayotes into thick rounds. Boil them in salted water until just tender. Place a slice of cheese between two chayote rounds. Whip the egg whites until stiff peaks form, then fold in the yolks. Dredge the chayote "sandwiches" in flour, then dip into the egg batter. Fry in hot oil until golden. Place the fried rellenos into a pot of simmering tomato sauce and cook for 10 minutes.
