Roasted Yam with Pepper Sauce
West African street food staple — chunks of yam roasted over charcoal until smoky and served with a fiery tomato-pepper sauce.

Ingredients
- 1kg white yam, peeled and sliced thick
- Vegetable oil for brushing
- Salt
- Pepper sauce: 4 tomatoes, 4 scotch bonnet peppers, 1 onion, 2 tbsp palm oil, salt
Instructions
- Slice yam into 1-inch thick rounds. Brush with oil and salt.
- Grill over charcoal (or broil) turning until golden and smoky on both sides, 20-25 minutes.
- For sauce: blend tomatoes, peppers, and onion. Fry in palm oil 10 minutes.
- Season sauce with salt.
- Serve roasted yam chunks with pepper sauce for dipping.
