Roti Prata
A crispy, flaky Indian-influenced flatbread served with a side of curry or dhal.

Ingredients
- 500g all-purpose flour 1 cup water 1 tsp salt 1 tbsp sugar 1/2 cup ghee or clarified butter Curry or sugar for serving
Instructions
- 1. Mix flour, water, salt, and sugar into a smooth dough. Knead well for 10 minutes. 2. Coat dough balls with ghee and let rest for at least 4 hours (overnight is better). 3. Flatten a ball and stretch/flip it until paper-thin. 4. Fold the edges inward to form a square or coil it into a circle. 5. Fry on a hot griddle with ghee until golden brown and crispy on both sides. 6. "Clap" the prata with your hands immediately after frying to fluff it up. 7. Serve with dhal or mutton curry.
