The world's most famous chocolate cake: a dense chocolate sponge with a thin layer of apricot jam, coated in dark chocolate ganache.

Ingredients
- Cake: 140g butter, 110g icing sugar, 6 eggs, 130g chocolate (55% cocoa), 110g sugar, 140g flour. Filling: 200g apricot jam. Glaze: 200g sugar, 125ml water, 150g chocolate.
Instructions
- 1. Prepare the chocolate sponge and bake at 340°F (170°C). 2. Let cool and slice horizontally. 3. Spread warm apricot jam between the layers and on the outside. 4. Make the chocolate glaze by boiling sugar and water, then adding chocolate. 5. Pour the glaze over the cake in one smooth motion. 6. Serve with unsweetened whipped cream.
