Salteñas de Carne
Bolivia's iconic street pastry; juicy baked empanada-like pockets with a sweet and spicy beef-potato filling and a delicious broth inside.

Ingredients
- Dough: 500g flour, 100g lard, 1 tbsp achiote, 2 tbsp sugar, salt, warm water. Filling: 500g beef (diced), 2 potatoes, 1 onion, 1/2 cup peas, 12 olives, 2 boiled eggs, raisins, beef broth, gelatin (optional for juice), cumin, aji panca.
Instructions
- 1. Cook spiced meat-potato filling with olives, raisins, and peas. 2. Mix with gelled broth so it stays solid when cold. 3. Prepare the slightly sweet dough. 4. Fill dough circles with the cold filling and seal with a characteristic "repulgue" on top. 5. Bake at very high heat until golden. 6. Eat hot, holding vertically to keep the juice inside.
