Samgyetang (Ginseng Chicken Soup)

A nutritious, invigorating soup featuring a small whole chicken stuffed with glutinous rice, ginseng, jujubes, and garlic, simmered into a milky broth.

  1. Clean the chicken and remove the giblets and excess fat.
  2. Stuff the chicken cavity with soaked glutinous rice, ginseng, jujubes, and garlic.
  3. Cross the chicken legs and tie them with kitchen twine to keep the stuffing inside.
  4. In a large pot, add the chicken, ginger, and water. Bring to a boil.
  5. Reduce heat to medium-low, cover, and simmer for 1 to 1.5 hours until the chicken is tender and the broth is flavorful.
  6. Skim off any excess fat from the surface.
  7. Serve the whole chicken in a large bowl with the broth. Garnish with green onions and serve with salt and pepper on the side.
