Samgyetang (Ginseng Chicken Soup)
A nutritious, invigorating soup featuring a small whole chicken stuffed with glutinous rice, ginseng, jujubes, and garlic, simmered into a milky broth.

Ingredients
- 1 small whole chicken (Cornish hen)
- 1/4 cup glutinous rice, soaked for 1 hour
- 1 fresh ginseng root
- 2-3 dried jujubes
- 5-6 cloves garlic
- 1 small piece ginger
- 8 cups water
- Salt and black pepper to taste
- Chopped green onions for garnish
Instructions
- Clean the chicken and remove the giblets and excess fat.
- Stuff the chicken cavity with soaked glutinous rice, ginseng, jujubes, and garlic.
- Cross the chicken legs and tie them with kitchen twine to keep the stuffing inside.
- In a large pot, add the chicken, ginger, and water. Bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 1 to 1.5 hours until the chicken is tender and the broth is flavorful.
- Skim off any excess fat from the surface.
- Serve the whole chicken in a large bowl with the broth. Garnish with green onions and serve with salt and pepper on the side.
