Samsa (Stuffed Pastry)
Flaky, triangular pastries stuffed with spiced meat and onions, traditionally baked in a tandoor oven.

Ingredients
- Dough: 500g flour, 1 egg, warm water, salt, 100g melted butter Filling: 500g ground lamb or beef, 3 onions finely chopped, 1 tbsp cumin, salt and pepper Sesame seeds for topping
Instructions
- Prepare a simple dough, let rest, then roll out thin, brush with butter, and roll up to create layers. Slice and roll into circles. Place a spoonful of spiced meat-onion filling in the center. Fold into a triangle shape and seal edges. Brush with egg wash and sprinkle with sesame seeds. Bake in a hot oven (or tandoor) until golden brown and crispy.
