Sancocho Costeño
Caribbean coast sancocho with fish, yuca, plantain, and coconut milk — the coastal version of Colombia's great soup tradition.

Ingredients
- 600g firm white fish (snapper or corvina), pieces
- 400ml coconut milk
- 2 yuca, cubed
- 2 green plantains, sliced
- 1 ear corn, cut
- 1 onion, diced
- 3 cloves garlic
- 1 bunch cilantro
- 1 tsp cumin
- Salt
- Lime
Instructions
- Bring 1L water to boil with onion, garlic, and cumin.
- Add yuca. Cook 15 minutes.
- Add plantain and corn. Cook 10 minutes.
- Add coconut milk. Simmer 5 minutes.
- Add fish. Cook 10 minutes until just done.
- Add cilantro. Serve with lime and white rice.
