Sanguche de Butifarra
Lima's most traditional sandwich — slices of Peruvian ham (jamón del país) with salsa criolla in crusty bread.

Ingredients
- 2 crusty bread rolls
- 300g jamón del país (Peruvian-style ham) or cooked ham, sliced
- For salsa criolla: 1 red onion very thinly sliced, aji amarillo or lime, cilantro, salt, splash vinegar
- Mustard (optional)
Instructions
- Make salsa criolla: combine onion, chili, cilantro, lime, salt, and vinegar. Let sit 10 minutes.
- Split the roll.
- Layer ham slices generously.
- Top with salsa criolla.
- Add mustard if desired.
- Press and eat immediately.
