Saskatoon Berry Pie
A prairie favorite featuring unique Saskatoon berries, which have a flavor similar to blueberries with a hint of almond.

Ingredients
- 4 cups Saskatoon berries
- 1/2 cup sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp almond extract
- Double crust pie pastry
- 1 tbsp butter
Instructions
- Pre-heat oven to 400°F (200°C). In a large bowl, toss berries with sugar, cornstarch, lemon juice, and almond extract. Line a 9-inch pie plate with bottom pastry. Pour in the berry mixture. Dot with butter. Cover with top pastry, seal, and cut vents. Bake for 15 minutes, then reduce heat to 350°F and bake for another 35-40 minutes until crust is golden and juice is bubbling.
