Saus (Pig Feet Pickled)
Panamanian pickled pig feet — slow-cooked then marinated in lime, vinegar, onion, and hot pepper. A Carnival and holiday tradition.

Ingredients
- 1.5kg pig feet, cleaned and halved
- 1 cup white vinegar
- Juice of 4 limes
- 2 onions, sliced into rings
- 1 habanero or aji chombo
- 2 cucumbers, sliced
- Salt and pepper
Instructions
- Boil pig feet in salted water 2 hours until very tender.
- Cool and cut into small pieces.
- Combine vinegar, lime juice, onions, pepper, and cucumber.
- Add pig feet. Toss well.
- Marinate refrigerated at least 4 hours (overnight better).
- Serve cold as a snack or appetizer.
