Scallion Oil Noodles
Simple yet aromatic noodles tossed in a fragrant oil made from slowly fried scallions and a sweet soy sauce.

Ingredients
- 200g wheat noodles
- 1 large bunch scallions (green parts)
- 100ml vegetable oil
- 3 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp sugar
Instructions
- Cut scallions into 5cm lengths. Heat oil in a pan and fry scallions on low heat until dark brown and crispy. Remove scallions.
- Mix soy sauces and sugar into the remaining oil. Simmer briefly until sugar dissolves.
- Boil noodles until al dente. Drain and toss with the scallion oil sauce.
- Top with the crispy fried scallions and serve.
