  1. Boil meat in 3L water to make a rich broth (about 1.5 hours). Remove meat, shred, and return to pot.
  2. Sauté onions and carrots until soft, then stir in tomato paste.
  3. Add potatoes to the broth and cook for 10 minutes.
  4. Add sauerkraut and the sautéed vegetables. Simmer for another 20-30 minutes.
  5. Add bay leaves and peppercorns in the last 10 minutes.
  6. Serve hot with a dollop of sour cream and fresh dill.
