The definitive Russian cabbage soup, eaten for centuries across all social classes. This "sour" version uses sauerkraut for a deep, complex tang.

Ingredients
- 500g sauerkraut (rinsed if too sour)
- 500g beef brisket or pork (on the bone)
- 2 onions, chopped
- 2 carrots, grated
- 3 potatoes, cubed
- 2 tbsp tomato paste
- 2 bay leaves, black peppercorns
- Fresh dill and sour cream for serving
Instructions
- Boil meat in 3L water to make a rich broth (about 1.5 hours). Remove meat, shred, and return to pot.
- Sauté onions and carrots until soft, then stir in tomato paste.
- Add potatoes to the broth and cook for 10 minutes.
- Add sauerkraut and the sautéed vegetables. Simmer for another 20-30 minutes.
- Add bay leaves and peppercorns in the last 10 minutes.
- Serve hot with a dollop of sour cream and fresh dill.
