Shiro Wat
The most common daily dish in Ethiopia — a smooth, savory stew made from powdered chickpeas or broad beans.

Ingredients
- 1 cup Shiro powder (spiced chickpea flour)
- 1 onion, finely minced
- 1/4 cup Vegetable oil or Niter Kibbeh
- 2 tbsp Tomato paste (optional)
- 3 cups Water
- Garlic and green chili
Instructions
- Sauté onions in oil until translucent.
- Add tomato paste and garlic, cook for 2 minutes.
- Whisk shiro powder into water to avoid lumps, then pour into the pot.
- Simmer while stirring constantly until it thickens into a smooth sauce.
- Finish with a dollop of kibbeh and fresh chilies.
