Sima (Finnish May Day Mead)
A sparkling, citrusy fermented drink made with lemons, brown sugar, and raisins.

Ingredients
- 10 cups water, 1 cup brown sugar, 1 cup white sugar, 2 lemons, pinch of yeast, raisins.
Instructions
- Dissolve sugars in boiling water. Add sliced lemons. When lukewarm, add yeast. Let sit for 24 hours. Bottle with a few raisins in each bottle. When raisins float to the top, sima is ready to drink.
