Sinigang na Baboy
A classic Filipino sour soup made with pork and a variety of vegetables in a tamarind-based broth.

Ingredients
- 1kg pork belly or ribs, cut into pieces 1 large onion, quartered 2 large tomatoes, quartered 1 bunch water spinach (kangkong) 1 radish (labanos), sliced 4 pieces okra 2 pieces long green chillies 1 pack tamarind soup base (or fresh tamarind juice) 2L water Fish sauce (patis) to taste
Instructions
- 1. In a large pot, bring water to a boil. Add pork, onion, and tomatoes. Simmer for 45-60 minutes until pork is tender. 2. Add the tamarind base and season with fish sauce. 3. Add the radish and chillies. Simmer for 5 minutes. 4. Add the okra and simmer for another 3 minutes. 5. Finally, add the water spinach and turn off the heat. The residual heat will cook the leaves. 6. Serve hot with steamed white rice.
