Sisig
A sizzling dish made from chopped pig's face and ears, seasoned with calamansi, onions, and chili peppers.

Ingredients
- 500g pork face and ears (boiled until tender) 1 large white onion, finely chopped 5-10 pieces calamansi (or lime) 3 red bird's eye chillies, chopped 2 tbsp soy sauce 1/4 cup mayonnaise (optional for creaminess) 1 egg Butter or oil
Instructions
- 1. Grill or fry the boiled pork until crispy, then chop into very small pieces. 2. Heat a cast-iron skillet (sizzling plate) or pan with butter. 3. Sauté the chopped pork until it sizzles and becomes extra crispy. 4. Add the chopped onions and chillies. Season with soy sauce and calamansi juice. 5. Stir in mayonnaise if using for a modern, creamy texture. 6. Create a small well in the center and crack an egg. Serve while the plate is still sizzling.
