Slap Chips
South African-style thick-cut fries, soft and "limp" (slap), heavily seasoned with salt and vinegar.

Ingredients
- 1kg large potatoes, peeled and cut into thick batons Oil for deep frying Coarse salt Lots of brown vinegar
Instructions
- 1. Soak the cut potatoes in cold water for 30 minutes. Drain and pat dry. 2. Heat oil to medium (around 160°C). Fry the chips in batches until just cooked but not browned. 3. Drain and let rest. 4. Flash fry the chips at a higher temperature (180°C) for 2-3 minutes until they have a slight skin but remain pale and soft. 5. Immediately toss in a bowl with plenty of salt and vinegar while steaming hot. 6. Wrap in brown paper or newspaper to let the steam soften them further.
