Sopa de Frijoles Negros
A velvety Cuban-style black bean soup perfumed with cumin, oregano, and a splash of sherry vinegar, served with rice and lime.

Ingredients
- 500g dried black beans, soaked overnight
- 1 large onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp olive oil
- 2 tbsp sherry vinegar
- Salt and pepper
- Sour cream, lime wedges, cilantro for serving
Instructions
- Drain beans, cover with 2L fresh water. Bring to boil, then simmer.
- Sauté onion, pepper, and garlic in olive oil until fragrant.
- Add to beans with cumin and oregano. Simmer 1.5-2 hours until very tender.
- Blend half the soup and return to pot. Add vinegar, salt, pepper.
- Serve with sour cream, lime, and cilantro.
