Sopa Paraguaya (Paraguayan Cornbread)

The national dish of Paraguay. Despite its name (which means "Paraguayan Soup"), it is a dense, savory, and moist cornbread enriched with cheese and onions.

  1. 1. Slice onions into thin half-moons and sauté in lard/butter until soft but not browned. Let cool. 2. Whisk eggs until fluffy. 3. Mix cornmeal, salt, milk, sautéed onions, and crumbled cheese. 4. Gently fold in the beaten eggs. 5. Pour the batter into a greased rectangular baking pan. 6. Bake at 200°C (400°F) for 40-45 minutes until the top is golden and a toothpick comes out clean.
