Kässpätzle (Cheese Spätzle)
The comfort food of Swabia — soft egg noodles layered with mountain cheese and topped with crispy caramelized onions. Often called the German answer to macaroni and cheese.

Ingredients
- 500g flour
- 5 eggs
- 1/2 cup warm water
- 1 tsp salt
- 200g Bergkäse or Emmental cheese, grated
- 2 large onions, thinly sliced and fried until crispy
Instructions
- Mix flour, eggs, salt, and water into a tough batter. Beat with a spoon until air bubbles form.
- Bring a large pot of salted water to a boil. Use a Spätzle press or a knife to scrape small pieces of batter into the water.
- Boil until the noodles float to the surface (about 2 minutes). Remove with a slotted spoon.
- In a baking dish, layer hot noodles with grated cheese.
- Bake briefly until cheese is melted. Top with a mountain of crispy onions.
