Kässpätzle (Cheese Spätzle)

The comfort food of Swabia — soft egg noodles layered with mountain cheese and topped with crispy caramelized onions. Often called the German answer to macaroni and cheese.

Instructions

  1. Mix flour, eggs, salt, and water into a tough batter. Beat with a spoon until air bubbles form.
  2. Bring a large pot of salted water to a boil. Use a Spätzle press or a knife to scrape small pieces of batter into the water.
  3. Boil until the noodles float to the surface (about 2 minutes). Remove with a slotted spoon.
  4. In a baking dish, layer hot noodles with grated cheese.
  5. Bake briefly until cheese is melted. Top with a mountain of crispy onions.
