French-Canadian Split Pea Soup
A thick, hearty soup made from yellow split peas and a ham bone, traditionally known as "Habitant" soup.

Ingredients
- 2 cups dried yellow split peas, rinsed
- 8 cups water or chicken stock
- 1 ham hock or leftover ham bone
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 1/2 tsp dried savory or thyme
- Salt and pepper to taste
Instructions
- Place peas, water, and ham hock in a large pot. Bring to a boil, then reduce heat to low. Simmer for 1 hour, skimming any foam from the top. Add onion, carrots, celery, and herbs. Continue to simmer for another hour or until peas are completely broken down and soup is thick. Remove the ham hock, dice any meat, and return it to the pot. Season with salt and pepper.
