Sweet and Sour Squirrel Fish
A masterpiece of knife skills: deboned fish carved to resemble a squirrel, deep-fried and glazed.

Ingredients
- 1 Mandarin fish or Sea Bass
- Batter: Flour, egg yolk
- Sauce: Ketchup, vinegar, sugar, pine nuts
Instructions
- Debone and carve the fish into fine cross-hatched patterns without cutting through the skin.
- Coat in batter and deep-fry until it fans out and becomes crispy.
- Drizzle with sweet and sour sauce and garnish with pine nuts.
