Sumalak (Sprouted Wheat Sweet)
A sacred and ritualistic sweet paste made from sprouted wheat, cooked for 24 hours for the Nowruz festival.

Ingredients
- Sprouted Wheat, Flour, Water, Oil, Stones (to prevent burning).
Instructions
- 1. Extract juice from sprouted wheat. 2. Mix with flour and oil in a massive kazan. 3. Stir continuously for 24 hours. 4. Let it "breathe" under a cloth before serving.
