Sutināti Kāposti (Stewed Sauerkraut)

Slow-cooked sauerkraut with onions, carrots, and often a touch of sweetness from sugar or beer.

  1. 1. If the sauerkraut is too sour, rinse it lightly in cold water. 2. In a large heavy-bottomed pot, sauté onions and carrots in butter. 3. Add the sauerkraut, sugar, caraway seeds, and water/beer. 4. Cover and simmer on very low heat for at least 2 hours, stirring occasionally. 5. The sauerkraut should become dark golden and very tender. 6. Serve as a side dish to roast pork, sausages, or blood sausage.
