Syrnyky (Cheese Pancakes)
Sweet, fluffy pancakes made primarily from "tvorog" (farmer's cheese), served for breakfast or as a light dessert.

Ingredients
- 500g farmer's cheese or dry cottage cheese
- 1 egg
- 3 tbsp sugar
- 1 tsp vanilla extract
- 4-5 tbsp all-purpose flour (plus more for dusting)
- Pinch of salt
- Optional: 1/4 cup raisins
- Butter or oil for frying
- Toppings: Sour cream, jam, or honey
Instructions
- Mash the cheese with a fork or pass it through a sieve for a smoother texture.
- Mix in the egg, sugar, salt, vanilla, and raisins (if using).
- Add the flour gradually until you have a soft, slightly sticky dough.
- Shape the dough into a log on a floured surface and cut into small discs (about 2cm thick).
- Dredge each disc lightly in flour.
- Heat butter or oil in a pan over medium heat. Fry the syrnyky for 3-4 minutes per side until golden brown.
- Serve warm with sour cream and your choice of sweet toppings.
