Tacos al Pastor
Iconic Mexico City tacos featuring marinated pork cooked on a vertical spit, served with pineapple.

Ingredients
- 1 kg pork shoulder, thinly sliced
- Marinade: dried guajillo chiles, achiote paste, pineapple juice, vinegar, garlic, spices
- Small corn tortillas
- 1 fresh pineapple, peeled
- Toppings: diced onion, fresh cilantro, lime wedges, and salsa verde
Instructions
- Marinate the pork for at least 4 hours (or overnight) in the chili-achiote blend.
- Ideally, stack the meat on a vertical spit (trompo) with a pineapple on top and roast.
- For home cooking: sear the marinated meat in a very hot pan until charred and cooked through. Finely chop.
- Warm the tortillas. Fill with meat and a small slice of pineapple.
- Top with onion, cilantro, and a squeeze of lime.
